Pecan Butter

Has your dog (assuming that you have one) ever frantically rubbed their back against a certain spot in the carpet continuously? Our carpet is brand new, so I don’t exactly know what is attracting our chihuahua to this particular spot, or any spot for that matter. But boy, is he going to town as I write this! Of course, he’s also the special one who has a thing about licking. He licks his paws, the bedspread, my sweatshirt-pretty much anything he can get his paws on. I would try to get him to stop, but the expression of pure bliss on his face is priceless.

Time is flying by around here. It’s already spring!! When in the world did that happen?? Though I must say it was an odd first day of spring here in Texas as we had a freeze advisory. Which brings me to another thing I can put on my list of things learned about Texas-the only predictable thing about spring weather in Texas is that it’s unpredictable. I’ve also heard that it can be summed up in one word: tornadoes. We had the “pleasure” of experiencing our first tornado warning in the new house last week, and what I really mean by pleasure is sheer panic. It consisted of being startled awake to the sound of the siren on my phone, shaking my husband awake and all but pushing him out of bed into the closet along with the dogs. Thankfully, there wasn’t an actual tornado, and we only had to stay in the closet for 30 minutes, but I’m not sure if I’ll ever get used to the idea of tornado warnings.

But speaking of Texas, they have pecans. Pecans are kindof a big deal around here. In case you weren’t aware, well now you know. I have very fond memories as a child spending afternoons in front of my grandparents house in west Texas with a grocery bag in tow picking up pecans from the trees. It was like an easter egg hunt but better because I knew that later, I would get to help remove the shells once they were cracked by the sheller aka mom. This pecan butter brings back all the memories with a delicious twist.

Salted Chocolate Pecan Butter


2 cups pecans
1/4 cup pecan oil (melted coconut oil would probably work here too)
2 tablespoons cacao powder (cocoa powder would work too)
2 tablespoons raw honey
1 teaspoon vanilla extract
1/2 teaspoon sea salt


  1. Place pecans in a food processor and process until smooth (you might need to scrape the sides down)
  2. Once smooth, add in pecan oil
  3. As the butter becomes runnier, add in the cacao powder, honey, vanilla, and salt (again, scraping the sides down)
  4. And that’s it! Eat it with sliced apples, spread it on  or even by the spoonful! (oh yes, I’ve done it)
